The type of diet you are doing works! I do the Atkins Diet and I have been able to lose all the weight I want. I lost about 20 pounds and I am now a size 4 and I weigh around 113. Like you I also eat lots of fat. I eat TONS of butter, but I have found that I am unable to eat coconut or palm oil because it gives me irregular heartbeat. My daily menu is very similar to yours, but I usually make it a point to eat some veggies with every meal. It does involve a lot of cooking, at least for me it does, but you can always cook a big pot of chicken in a slow cooker and then freeze it in little bags.
Also, I want to say when I told my doctor that my goal was 115 pounds, he told me I would never reach it. Well he was wrong! These ketogenic type diets work and they are healthy. I can certainly see me eating this way for life because I am never hungry, in fact I don't even need to eat snacks.
Good luck to everyone out there and congratulations to Neatski on the new body!
